Turkey Chilli

It’s been a while since I’ve written a blog post – I’m still getting used to this whole blogging thing! Today I’m going to share my current go-to meal prep staple – turkey chilli. I make this at least every fortnight, and still haven’t gotten sick of it! I usually make a big batch on Sunday night, which does me the next four days. It reheats really well, so I usually bring it to college in tupperware, nuke it in the microwave for 2 minutes and lunch is sorted! It’s super versatile too – you can swap the turkey mince for beef mince or kidney beans, change up the veg, or swap out the rice for sweet potato. There’s so many options!

Makes 4 Servings

Ingredients

  • 400g turkey mince
  • One 400g tin chopped tomatoes
  • 2 bell peppers, chopped
  • 1/2 red onion, diced
  • 1/2 bag baby leaf spinach
  • 1 tbsp soy sauce (use tamari to make it gluten free)
  • One 400g tin red kidney beans (optional)
  • 1 tsp smoked paprika
  • 1 tsp garlic paste
  • A pinch of sea salt
  • 1/2 tsp chilli powder (or to taste)
  • Coconut oil or low calorie spray for cooking
  • Rice to serve

Directions

  • Heat a little oil on a frying pan on a medium heat
  • Add the chopped peppers to the pan and fry until soft
  • Transfer the peppers onto a plate, then add a little more oil to the pan
  • Fry the diced onion until soft, then add the turkey mince and stir fry on high heat until all the mince is white
  • Add the peppers back in, along with the tin of chopped tomatoes and kidney beans if using, and reduce the heat to a simmer
  • Add in the spinach, and stir until wilted
  • Add the soy sauce/tamari and garlic paste, then season to taste with the paprika, chilli powder, and salt
  • Keep simmering until most of the liquid has been absorbed, then it’s all done!
  • Serve warm with some rice
